How is this different from the SEO Checker?

The SEO Checker grades the tags in your <head>. This also reads the body: your heading hierarchy, images without alt text, how many internal and external links you have, and roughly how much content is on the page.

Why does it say my page is thin when it looks full?

The audit fetches your HTML without running JavaScript, exactly as a basic crawler does. If your content is rendered client-side, it is invisible here — and invisible to any search engine that does not execute your JavaScript.

Should every page have exactly one H1?

It is the safest convention. HTML5 permits several, and Google says it copes with them, but one H1 removes any ambiguity about what the page is primarily about.

Do images really need alt text for SEO?

Yes, twice over: it is how the image gets understood for image search, and it is what a screen reader announces. Reserve an empty alt attribute for images that are purely decorative.
